Ingredients:

  1. Hummus (checkout out recipe for classic hummus here)
  2. Pita wraps/pockets – whole wheat pita wrap/pocket
  3. Coriander chutney
  4. Home baked/refried black beans
  5. Sliced carrots
  6. Sliced beetroot
  7. Sliced onions
  8. Sliced mushrooms
  9. Sliced capsicum
  10. Diced cucumber
  11. Lettuce
  12. Olive oil/butter
  13. Black pepper- freshly ground
  14. Salt – we recommend rock salt
  15. Sweet onion dressing
  16. Sriracha sauce
  17. Stir fry sauce

Pita filling:

  1. Thinly slice carrots, beetroots, onions, mushrooms and capsicums.
  2. In a pan add a few drops of olive oil and/or butter.
  3. Add the sliced carrots, beetroots, onions, mushrooms and capsicums.
  4. Add salt and black pepper as per taste.
  5. Add stir fry sauce to the vegetables.
  6. Evenly cook and stir fry the vegetables till they are tender and a bit crisp.

Assembly:

  1. Take a pita wrap/pocket and cut it into half. We recommend using whole wheat pita wrap/pocket.
  2. Put the wrap in a sandwich maker and toast for a min or till the wrap is a bit brown from the outside.
  3. Open the pita wrap and spread a spoon of hummus on the inside of the wrap.
  4. Spread a bit of coriander chutney on the other side inside the wrap.
  5. Put a leaf of lettuce inside the wrap to serve as the base.
  6. Now fill the pocket with 1-2 spoons of home backed/refried black beans.
  7. Top the beans with the stir fried vegetables.
  8. Add diced cucumbers on the top.
  9. To finish off the wrap, add some sriracha sauce (if you like it hot) and some sweet onion salad dressing. You can add any dressing of your choice.
  10. Serve with toasted pita and hummus on the side.
