Dahi Waali Lauki

Serves: 2 people
Cooking Time: 15 minutes

Ingredients:
Lauki/Bottle Gourd – 250 Gram
Fresh Curd – 1 small bowl, blend it smooth
Green Chilli – 2 – 4 slit and cut into 2 long pieces
Kasuri Methi/Dry Fenugreek Leaves – 1/2 Teaspoon
Red Chilli Powder – as per taste
Turmeric powder – 1/2 Teaspoon
Coriander powder – 1 Teaspoon
Cumin seeds – 1 Teaspoon
Asafoetida – a pinch as per taste
Salt – as per taste
Oil /Ghee – 1 Tablespoon
Coriander leaves – as required for garnishing, as per taste

How To Make It:
Wash and peel the bottle gourd.
Cut into rectangular shape and size.
Boil the pieces in water for 10 – 15 minutes in a kadhai (not using a cooker here)
Heat oil/ghee in a kadai.
Add asafoetida and cumin seeds. Let the cumin seeds crackle.
Add the chillies, Saute it for a minute. Then add kasuri methi (VERY IMPORTANT INGREDIENT). Mix well.
Now, add red chilli powder, turmeric powder, coriander powder. Saute it on low flame for few seconds.
Add the water in which you boiled the lauki to prevent masala from burning.
Now add boiled lauki/bottle gourd. Mix well and cook for a minute.
Switch off the gas and immediately add the curd. Mix well slowly for few seconds.
Garnish it with chopped coriander leaves.
